There are many types of wood available in the market for smoking, ranging in both sizes and shapes. Although they serve the same purpose for smoking, the end results may be very different. Here are some guidelines you may want to review before choosing the right type of wood for your smoker.
Wood Chunks
They come in various sizes from 1x6 inches or bigger. They should be soaked in water for about an hour before using. You can place them directly on a bed of coals or in the area provided under the gas flames in gas grills, which will give excellent flavor. It is ideal for horizontal dry wood smokers, which have a separate firebox on the side for its bigger size. Wood chunks last longer than the alternatives but also take more time to produce smoke.
Wood Chips
Chips are great because of their smaller size. This makes them more versatile for different kinds of smokers. They should be soaked in water for a little while before placing directly in a bed of charcoal or in a metal/foil container. For best results, pinch some small holes when using foil to enable the smoke of the wood flavor to infuse into the meat. You can even put the foil between the jets of a conventional gas grill to add smoker flavor to the food.
Wood Pellets
Wood pellets are made from sawdust that is dried, pulverized and extruded through a rotating die under enormous pressure. The natural lining in the wood binds the pellets into their shape. The wood pellets generate a high BTU, clean burning, and low ash and moisture fuel which produce rich flavorful results. They produce much more smoke at a lower temperature, which allows the wood flavor to infuse into the meat.
Keep in mind that there are many different kinds of flavor woods. The popular flavor woods are hickory, cherry, apple, plum, pecan, oak and mesquite. Some pellet packages even come with five or six different flavors for you to test drive. You can mix and match to produce your unique smoking recipes. I personally love to mix cherry wood and hickory pellets for a fuller flavor.
